		<description>Umami is not really a flavor; you can add MSGs to any food and enhance it&#39;s umami. &lt;br&gt;&lt;br&gt;I&#39;ve noticed the same thing, the older I get the more refined my palate is. We don&#39;t start losing our taste until around 50-60 so it&#39;s definitely the mindset of trying new things and being open to new tastes. Like the fish dish you just did. I used to hate fish skin because it was very strong in flavor but now I love it (if it&#39;s made well). I still hate dairy though :)</description>
